The Oliver Opens on the Country Club Plaza

The Oliver Seasonal Healing Cocktail
Seafood, pasta, sandwiches, steaks and cocktails are just some of the menu offerings at The Oliver, the Country Club Plaza’s newest restaurant addition. The American-style tavern opens June 16 at 4807 Jefferson St. in the former Republica space. Get a first look at The Oliver’s signature dishes and drinks before they open to the public on Thursday.

Branded as “American Cuisine Redefined,” the restaurant serves classic dishes with a creative twist. Case in point: Sloppy Joes ($14) on steamed buns, Sweet Potato Mac & Cheese ($7) and the oh-so-poppable Pork Nuggets ($10) with smoked mozzarella, jalapeño and bbq sauce. Many of The Oliver’s menu items incorporate regional ingredients and local names like Little Freshie, Zim’s Sauces and Rieger Whiskey.

The drink menu includes a variety of classic cocktails, highballs and house bottled cocktails (sparkling and still). I suggest starting with the Seasonal Healing ($8, pictured above) made with vodka, Little Freshie soda, lemon and blackberry. Or, The Oliver’s bottled Pinwheel cocktail – a mixture of Lillet rose, sherry and watermelon-mint tea.

The Oliver Meatballs
The Oliver’s Meatballs ($12) were a hot menu item during the soft opening. It’s easy to see why once you bite into its tender mix of bison and pork, bathed in a rich mustard demi glace. Don’t plan on sharing – you’ll want these balls all to yourself.

The Oliver Crab Cakes
Good crab cakes can be hard to come by in this city, but I approve of The Oliver’s ($14). The outer layer is perfectly crisp, revealing an inside loaded with fresh crab meat. And the accompanying homemade chips and savory celery root remoulade are just as delicious as the main event. Plus, size-wise, it’s easily shareable.

Mongolian Pork Chops ($20) with Chinese mustard sauce
Faroe Island Salmon ($19) seared, with a smoked bacon coriander vinaigrette and served with sautéed cabbage
The O Burger ($15) made with Hatfield beef and topped with white cheddar, pickle, caramelized onion, dijonnaise and a housemade bun
